While Shodoshima is known for its olives, the quantity of harvestable fruit is limited. Therefore, the amount that can be pressed is also limited, with each fruit requiring manual picking, naturally leading to higher prices. "We hope more people can taste the Green Fruit!" In our quest to create the "best olive oil," we partnered with an organic cultivation farm, Familia Roca, in Spain, one of the world's largest olive-producing countries, where they passionately press green fruits and share the same philosophy.

To achieve the delicious Green Olive Oil, we focus on several key elements:
First, "Emphasis on Freshness". Olive oil begins to oxidize after the fruit is damaged, so we immediately press it after harvest to maintain the fresh taste and quality of the Green Fruit Oil.
Second, "Cold Pressing". Although less oil is produced through cold pressing, it can extract the unique aroma and flavor of the fruit.
(*Only 180g of rare oil can be pressed from 1,000 fruits.)
Lastly, "Limited Harvest Period". The fully ripe fruits used for Green Fruit Oil are harvested only during a brief period each year. By pressing the fruits at the right maturity, you can enjoy a fresh taste.

  • The 20th year of green fruit olive oil produced in collaboration with the Luque family, an olive farm in Spain.
    Although Shodoshima is known as an olive-producing region, there is a limited amount of fruit that can be harvested. As a result, the quantity that can be pressed is small, and since each olive is hand-picked, the price is also high.

    "We want more people to enjoy green fruit!" In our search for partner farms in the world's largest olive-producing country, Spain, to create the "best olive oil," we encountered the Luque family, who practice organic farming without pesticides.

    In Spain, where it is common to press fully ripe olives, the Luque family shared our passion for pressing green fruit and understood our vision for green fruit olive oil.

  • What we value in producing delicious green fruit olive oil is, first and foremost, "freshness." Since olive oil begins to oxidize when the fruit is damaged, we protect the fresh taste and quality of green fruit oil by pressing it immediately after harvest.

    Secondly, we use "cold pressing" for oil extraction. By pressing at low temperatures without raising the heat, the quantity of oil extracted is reduced, but this method brings out the unique aroma and flavor that can only be experienced with that year's fruit. (Note: It takes 1,000 olives to produce only one 180g bottle of this rare oil.)

    Lastly, we emphasize "limited harvest periods." The fruit that serves as the raw material for green fruit oil, which is just a step before being fully ripe, can only be harvested during a very short period each year. By carefully assessing the ripeness of the fruit during pressing, we ensure that the crisp flavor can be enjoyed until the very end.
